A seasonal take on quinoa that has all of my festive favourites!

Preheat oven to 200c.

Toss the diced butternut squash with olive oil and salt. Place on baking tray and cook in the oven for about 15 minutes when they should be golden.

Meanwhile, boil the quinoa with the water and stock cube. Reduce to a simmer and allow to cook for about 15 minutes, when the water has evaporated and the quinoa has expanded.
4.
Add all of the other ingredients to the quinoa, including the butternut squash. Mix to combine and season to taste with salt and pepper.
