Warm Winter Salad
I have to be honest and say that I've never loved brussel sprouts. However, I have finally found a way that I can enjoy them and that is this warm salad. It's a perfect side dish to a holiday meal and definitely makes me think of the winter holidays!

Ingredients
For the sprouts:
- 300g brussel sprouts
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp garlic powder
- Sprinkle of salt
For the Salad:
- 3 cups torn kale, hard veins removed
- 1 tsp salt
- 1 tbsp olive oil
- 100g blackberries, chopped
- 1/2 cup of lightly chopped pecans
- 1/4 cup of Parmesan, shaved or grated (or vegan cheese)
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
Step 1
Pre heat the oven to 200c fan. Coat the sprouts in 1 tbsp olive oil. 1 tbsp balsamic vinegar, garlic powder, and salt. Place in the oven on a baking tray for about 30 minutes.
Step 2
Meanwhile, massage your kale in a bowl with 1 tsp salt and 1 tbsp olive oil. Massage for 2 minutes as this softens the kale and gives it a lovely texture.
Step 3
Remove your sprouts from the oven. They should be soft on the inside and cruncy on the outside. Chop them in two.
Step 4
Add all of the ingredients to the kale and toss to combine.
