Vegetable Frittata

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, diced 
  • 3 garlic cloves, minced 
  • 2 red peppers, diced
  • 125g tender stem broccoli, diced
  • 2 cups spinach 
  • 8 eggs 
  • Salt and pepper
  • Basil, torn to serve 

Instructions

Step 1

Preheat oven to 180c.

Step 2

Heat the olive oil in a large, oven proof pan over medium heat.

Step 3

Add onion and cook for about 3 minutes.

Step 4

Add the garlic and cook for another minute or so.

Step 5

Add all the vegetables in and cook, stirring occasionally, for about 5 minutes.

Step 6

Add the spinach until it wilts. Remove from heat

Step 7

Spread the vegetables so there is a consistent layer across the pan.

Step 8

Whisk the eggs with salt and pepper.

Step 9

Pour the eggs over the vegetables.

Step 10

Place in the oven and bake for 20 mins.

Step 11

Serve with torn basil.
