Turkey chili
A lighter take on chili con carne

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 aubergine, diced
- 1 courgette, diced
- 1 red pepper, diced
- 300g Turkey mince
- 2 cans chopped tomatoes
- 1 can kidney beans
- 200ml chicken stock
- 2 tsp Worcestershire sauce
- 2 tbsp chili powder
- 1 tbsp cumin
- 2 tsp mixed herbs
- 1 tsp chili flakes
- Salt and pepper
Instructions
Step 1
Heat the olive oil in a deep large pan over medium high heat.
Step 2
Once hot, add the onions and cook for about 4 mins, stirring to avoid sticking.
Step 3
Add the garlic and cook for another 30 seconds.
Step 4
Add in the turkey mince, breaking up with a wooden spoon.
Step 5
After it turns brown, add the vegetables and cook for about 5 mins.
Step 6
Add in all of the other ingredients and stir to combine.
Step 7
Cover, boil and then reduce to a simmer for about 40 mins.
Step 8
Serve with spinach, Greek yogurt or avocado.
