Tofu stew

This a homey vegetarian stew. You can literally add in anything leftover vegetables and make it into a warm and delicious stew.

Ingredients

Vegetables stock

  • Vegetables stock
  • 20g Spring onion
  • 15g Onion
  • 10g Garlic
  • 250g water
  • 3g crushed peppercorn
  • Oil

Other Ingredients

  • 150g Tofu (diced)
  • 150g Zucchini (diced)
  • 40g Broccoli
  • salt
Needed kitchenware
  • Hand blender
Instructions

Vegetables stock:

In a pot, add in oil and saute spring onion, garlic, onions and crushed peppercorn for about 8 minutes.

Then add in 250g of water and let it boil for at least 15 minutes.

Use a hand blender to blend all the ingredients in the pot until smooth. If you don’t have a hand blender, allow it to cool and then use a regular blender, in batches if necessary.

Add tofu, zucchini and broccoli into the vegetable stock. Let it boil for another 20 minutes or till everything is soft.

Before serving this dish, season with salt.

You may add in any other or leftover vegetables or proteins into this stew.
