In a bowl. Place beef chunks, soy sauce, Chinese wine, sesame oil and some white pepper. Let it marinate for at least 10 minutes.

In a pan, add 1 tbsp oil and turn on high. When smoking, sear the marinated beef chunks for about 2 minutes. Once done, put in a bowl and set aside. (save the beef marinate, don’t throw it away)

In the same pan add 1 tbsp oil and turn on high. Then add in garlic, scallions, ginger and fry for about 2 minutes or till golden brown.

Add in the seared beef, beef marinate and cook for another 2 minutes. Once the gravy has thickened, it's ready to be served.
