Steamed Fish with Fermented Black Beans

No fuss quick and easy light midweek meal

Ingredients
  • 1 Whole fish, gutted and cleaned (About 500-600gms)
  • 1 tbsp fermented black beans (chopped)
  • 2 cloves garlic (chopped)
  • 1 thumb-sized piece of fresh ginger, peeled (julienned)
  • 1 handful scallions (julienned)
  • 1 tbsp sesame oil
  • 1 handful cilantro (chopped)
  • 1 red chili pepper (julienned)


Needed kitchenware
  • Wok/Steam oven
  • Steamer basket
Instructions

1.

Prepare wok and steamer basket then bring water to boil.

Rinse fish, pat dry and stuff half of the ginger and scallions into the fish cavity.

Lay some of the scallions and ginger on a plate and set the fish on top of them. Then top the fish with the chopped garlic, chopped black beans, some chili and rest of the ginger. Drizzle the sesame oil on top and put the plate in the steamer basket.

Steam for 10-15 minutes until done (check for doneness by using a chopstick to poke through the thickest part of the fish. If it comes out cleanly and the juices are clear, it is ready to be served)

Top the fish with the remaining scallions, chili and cilantro.

Tip

You may substitute with any fish you like or fillets which will shorten the cooking time.
