Spicy Asian Noodles

I absolutely love noodles but I don’t want all those carbs that usually make them delicious. Enter, barenaked noodles! These are the best tasting Konjac noodles I’ve had and they taste really close to the real thing! If you aren’t familiar with them, konjac noodles are extremely low calorie and have 0 net carbohydrates because they are basically just made from fibre and water.

Asian Fusion

Ingredients

  • 2 tbsp sesame oil
  • 200g protein of choice (I used prawns)
  • 4 garlic cloves minced
  • 1 tbsp ginger minced
  • 5 spring onions minced
  • 3 bok choy chopped
  • 1 packet barenaked noodles
  • ¼ cup soy sauce
  • 1 tbsp sriracha (or other hot sauce)
  • 2 tbsp fish sauce (or vegan fish sauce) 

Instructions

Step 1

Heat 1 tbsp sesame oil in a deep pan over medium high heat.

Step 2

Once hot, add your protein and cook until browned on all sides and cooked through, a couple minutes if using prawns.

Step 3

Remove from pan and set to the side. Add the other tbsp sesame oil to the pan.

Step 4

Once hot, add the garlic, ginger and spring onions.

Step 5

Cook for a couple of minutes, then add bok choy and cook for another couple of minutes.

Step 6

Add the noodles into the pan and sauté for 2 minutes.

Step 7

Add the soy sauce, sriracha and fish sauce, and then stir to combine.

Step 8

Add your protein back to the pan and combine.

Step 9

Remove from heat and serve.
