Spiced Vegetable Kebab

Vegetable skewers are a popular Indian street snack. It's packed with the aroma of traditional Indian spices and colourful veggies. This is a perfect and flavourful recipe for sharing with friends and family.
Ingredients
  • 1 tbs kosher salt
  • 1 tbsp Cumin Powder
  • 1 tbsp Coriander Powder
  • 2 tbsp Turmeric
  • 1 tsp Ground Blackpepper
  • ½ tsp Cayenne Pepper
  • ¼ tsp Asafoetida
  • 3 tbsp Canola Oil
  • 1 Red and Green Bellpepper, Deseeded and cut into squares
  • 1 Yellow Onion, cut into cubes and segmented
  • Half of a Cauliflower, cut into florets
  • 1 Eggplant, cut into cubes

Instructions

Combine the salt, cumin, coriander, turmeric, black pepper, cayenne pepper, and asafoetida in a small bowl.

Heat oil in a saucepan until just simmering. Add in spice mixture and cook, stirring frequently, for 1 minute. Remove from heat and let cool.

Put all the cut up vegetables into a bowl then add the spice mix. Mix well until evenly coated.
4.
Start skewering your vegetables, alternating between each veggie until finished.
5.
Heat up your charcoal grill and cook the skewers once ready. Cook each side of the vegetables until nice and charred before serving.

Tip
Soak the bamboo skewers in water for 30 mins before using to avoid them from burning easily.
