Shrimp Taco Salad

I love Mexican flavours and it's especially great when you can keep it light and healthy. Feel free to switch up your protein and add or remove veggies to suit your preferences. To make this family friendly, you could serve this to your kids in wraps.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion chopped
  • 1 red pepper  chopped
  • 1 yellow pepper chopped
  • 350g shrimp
  • 1 tbsp paprika
  • ½ tsp mild chilli powder
  • ½ tsp cayenne pepper
  • Salt and pepper to taste
  • 2 heads of small gem lettuce chopped
  • ½ avocado chopped
  • About 8 cherry tomatoes chopped
  • Juice of 1 lime
  • 3 tbsp tahini
  • Water

Instructions

Step 1

In a large pan, heat the oil over medium high heat.

Step 2

Add the onion and allow to cook for a couple minutes until they soften and become translucent.

Step 3

Add the peppers and continue to cook until they soften.

Step 4

Add the shrimp and all the seasonings (paprika, chilli powder, cayenne, salt and pepper) and cook for about 6 minutes, until the shrimp are pink and cooked through.

Step 5

Add the lettuce, avocado, and tomatoes to a bowl. Add in your shrimp pepper mixture and drizzle with sour cream.

Step 6

Serve with additional cut limes.
