Roasted Broccoli with Miso-Caeser Dressing

A delicious easy recipe that gives a potato salad vibe!

Ingredients

  • 1 brocoli head, chopped into florets
  • 1 tbsp olive oil
  • Salt and pepper
  • 2 tbsp Greek yogurt 
  • 1.5 tsp miso 
  • 1/4 tsp Worcestershire sauce 
  • Juice of 1 lemon 
  • 1/2 tsp garlic powder 
  • 1-2 tbsp grated parmesan 
  • Pepper to taste 

Instructions

Step 1

Preheat oven to 180c.

Step 2

Toss the florets in the olive oil and season with salt and pepper to taste.

Step 3

Roast for about 20 minutes. It should have slightly dark edges and be tender.

Step 4

Mix all other ingredients together in a small bowl.

Step 5

Toss the broccoli in some dressing to suit your preferences, (you will probably have leftover dressing).
