Raspberry crumble bars

Ingredients
- 250g raspberries
- 1 tbsp water
- 3 tbsp chia seeds
- 1 tbsp honey (optional and use less if your raspberries are sweet)
- 265g oat flour (oats blended in the blender)
- 1/2 tsp baking soda
- 80g salted butter, cold and cut into cubes
- 1 tbsp vanilla extract
- 4 tbsp honey or maple syrup
- 50ml hot water
Instructions
Step 1
Preheat oven to 180c.
Step 2
In a small pan, mix together raspberries, water and chia seeds over low heat.
Step 3
Stir to combine and prevent sticking, and allow to heat until the raspberries have broken down and the chia seeds have grown to thicken the mix. Remove from heat.
Step 4
Add the honey if using and stir to combine.
Step 5
In a bowl, mix the oat flour and baking soda.
Step 6
Add the butter and use your fingertips to combine the butter and flour into a crumb mixture.
Step 7
Add the vanilla and honey. Mix to combine and then add the water and mix again. You should have a mixture that can be formed into a ball. If not, add more water.
Step 8
Grease a 9 x 9 inch brownie pan.

Add 3/4 of the flour mixture and use your hands to stretch it out to form a thin base.
Step 10
Bake in the oven for 7 minutes.
Step 11
Then add the raspberry mixture on top and then sprinkle clumps of the remaining oat mixture over that.

Bake for about 15 min.
