Pumpkin Oat Pancakes
A delicious healthy pancake recipe that is full of fibre!

Ingredients
- 170g pumpkin puree (either roast and puree fresh pumpkin or you can buy canned pumpkin puree in the autumn at most supermarkets)
- 140g oats
- 175ml milk of your choice
- 2 eggs
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp ginger
- 1 tsp vanilla extract
Instructions
Step 1
Add all ingredients to a blender and blend to combine.
Step 2
Heat a nonstick pan on medium heat.
Step 3
Add about 2 spoonfuls of pancake mixture and heat for about 2-3 minutes.
Step 4
Flip and continue to cook for another 2-3 minutes (if they are getting too dark, turn the heat down)
Step 5
Enjoy hot!
