I love pork chops because they are so lean but I used to completely forget to make them! Now I make them all the time and this is a fun herby recipe.

Heat a drizzle of olive oil (1½ tbsp) in a pan over medium high heat.

Season your pork chops with salt and pepper, and then add to the pan. Cook for about 4-5 minutes each side.

Meanwhile, finely chop your herbs and add them to the lemon zest.

Add 2 tbsp olive oil to the herbs and season to taste with salt and pepper.
5.
Serve your pork chops with your gremolata on the side and vegetables.
