Philly Cheesesteak Peppers
This is a healthy take on the American Philly cheesesteak sandwich which is utterly delicious! Instead of a heavy sandwich, we are using the peppers as little cups to stuff our cheesesteak inside.

Ingredients
- 2 bell peppers halved
- Olive oil
- 350g steak chopped thinly or beef strips
- Salt and pepper
- 1 onion diced
- 1 garlic clove minced
- 1 tbsp dried Italian herbs
- 8 slices of provolone or mozzarella cheese
- Sliced parsley to garnish
Instructions
Step 1
Preheat your oven to 170°C.
Step 2
Place your peppers in a baking dish and cook for 30 minutes.
Step 3
In a large frying pan, heat oil over medium high heat. Add onions and garlic to pan and cook for a couple minutes.
Step 4
Season the steak with salt and pepper, and then add to the pan.
Step 5
Add the Italian herbs and cook for about 4 minutes.
Step 6
Remove the peppers from the oven. Add a slice of cheese to the bottom of the peppers, fill the peppers with the steak mixture, and then add another slice of cheese.
Step 7
Place back in oven for about 3 minutes on a broil setting to melt the cheese.
Step 8
Garnish with parsley and serve.
