Pesto Kebabs

Kebabs are a great dish to serve in the summertime or for indoor cooking when the weather is not up to scratch. You can always switch out the steak for chicken or just add more veggies for a nice vegetarian and vegan option.

Ingredients

  • 2 steaks
  • 1 courgette chopped into coins
  • 100g small mushrooms
  • 1 cup pesto (or vegan pesto)
  • Wooden skewers

Instructions

Step 1

Soak your skewers for around 30 minutes. This will prevent them from burning.

Step 2

Cut your steak into relatively equal pieces. Marinate in half of the pesto for around 30 minutes.

Step 3

Drizzle some olive oil (1½ tbsp) over your veggies and toss to ensure a char.

Step 4

Thread your skewers, alternating the ingredients.

Step 5

Prepare your BBQ, or bring a grill pan to a medium high heat.

Step 6

Add your skewers, turning often to achieve a char on each side.

Step 7

Cook until done to your preferences, around 15 minutes.

Step 8

Spread the rest of the pesto over the skewers and serve.

Step 9

Spread the remainder of the pesto over the skewers and serve.
