This is such a firm favourite at Japanese restaurants but it is usually full of sugar! I've taken the sugar out, making it a much healthier recipe with the fermented miso being great for your gut.

Preheat the oven to 210c.

Mix together the miso paste, sesame oil, rice wine vinegar, and soy sauce.

Coat the cod in the mixture and then place on a baking tray. Bake for about 15 minutes.

Remove from oven and sprinkle with spring onions and sesame seeds
