This is a modified version of the traditional Lion’s Head Meatballs
1.
Blanch whole cabbage leaves in boiling water for 1 minute. Remove and let cool.

Combine all ingredients except the cabbage and mix well
3.
Line medium mixing bowl with blanched cabbage leaves, making sure leaves overlap each other
4.
Place minced chicken in centre of mixing bowl and fold cabbage leaves over chicken mixture to cover chicken completely
5.
Turn wrapped chicken upside down onto a shallow dish and place in a steamer. Steam on high heat for 30 minutes
6.
Garnish with sliced spring onion and serve immediately
