Mexican inspired cauliflower rice

Cauliflower rice is so versitile like regular rice. I've used traditional Mexican rice as the inspiration for a delicious side dish.
Ingredients
  • 1 tsp olive oil
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeƱo or green chili, sliced
  • Salt and pepper
  • 3 tbsp tomato paste
  • 2 tsp cumin-
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 packet of full green riced cauliflower (or whichever brand you prefer or riced using a grater or food processor)
  • Lime juice for serving

Instructions
1.
Heat olive oil in a pan over medium high heat. Once hot, add the onion and allow to cook for a couple of minutes.

Once transluscent, add the garlic and jalapeno.
3.
After another minute, add the tomato paste, cumin, parika, cayenne pepper and riced cauliflower. Season with salt and pepper.
4.
Cook, stirring often, for a few minutes until combined and the "rice" looks less moist.

Serve with lime juice.
