Mexican Cheesy Chicken

Another one tray meal for you! Throw it all on a tray and you have an easy and delicious dinner that is fast clean up!
Ingredients
  • 3 chicken breasts
  • 3 tbsp cream cheese 
  • 100g broccoli, chopped
  • 1 onion, sliced
  • 2 bell peppers, sliced 
  • 150g baby tomatoes 
  • 1 tbsp olive oil 
  • 1 tbsp mild chilli powder
  • 1 tsp garlic powder 
  • Salt and pepper 
  • 3 slices of cheddar 
  • 100ml mexican style salsa (I used green salsa) 
  • 2 spring onions, sliced into rounds

Instructions

Preheat your oven to 200c

Slice your chicken breasts in half to butterfly them. Spread the cream cheese over the chicken breast, add a few slices of onion and pepper, and then close the chicken back up so it’s like a sandwich.

Place the chicken breasts on a baking tray.

Place all the vegetables around the chicken, some on top is fine too.

Drizzle the olive oil over and the sprinkle the spices. Combine and rub with your hands onto the chicken and vegetables.

Add the cheddar slices over the chicken and drizzle the salsa on top.
7.
Cook in the oven for about 30mins, checking with a thermometer that your chicken is cooked through.

Serve with scattered spring onions.
