Lime shrimp tacos with avocado yogurt slaw

I was really craving some mexican flavours with avocado and lime when I made this, and it did not disappoint!

Ingredients

Shrimp

  • 300g shrimp
  • Juice of 1 lime
  • 1/4 tsp garlic powder 
  • 1/4 tsp onion granules 
  • 1/2 tsp paprika
  • 1/4 tsp chili powder
  • 1/4 tsp cumin 
  • Salt and pepper to taste
  • 1 tbsp olive oil 

Slaw

  • 2 avocados, mashed 
  • 1/2 cup coconut yogurt or Greek yogurt 
  • Juice of 1 lime
  • 1/2 tsp garlic powder 
  • 1/2 tsp onion granules 
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp cumin 
  • 1 tsp sriracha or hot sauce 
  • Salt and pepper to taste
  • 3 carrots, grated 
  • 1 cup cabbage, finely sliced 
  • 1/4 cup spring onions, sliced 

Tacos to serve (low carb, whole wheat or substitute lettuce wraps)

Instructions

1.

For the shrimp, mix together all of the ingredients except the oil and allow to sit for at least 10 minutes.

Heat a large pan with the oil on medium high heat. Once hot, add the shrimp and sauté until pink and cooked through, about 2 mins each side.

3.

For the slaw, mix all the ingredients other than the carrots, cabbage and spring onions. Mix until combined and adjust seasonings to your taste.

Add the vegetables in and toss until well coated.

5.

To serve, take a taco or lettuce wrap, then add the slaw followed by the shrimp and extra spring onions.
