Lemony Baked Pancake

This could honestly be breakfast or dessert but either way, I absolutely adore it! It’s like a massive pancake that is so delicious and full of fibre! It’s not an everyday recipe due to the maple syrup so make sure you save it for a treat!

Ingredients
  • Around 1 ½ tbsp butter for greasing
  • ¾ cup oat flour (make it yourself by throwing oats in a blender if you want)
  • ¾ cup unsweetened almond milk (or milk of choice)
  • 3 eggs
  • 1 tbsp arrowroot flour (or tapioca flour)
  • 1 tbsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • Zest of 1 lemon
  • Pinch of salt
Needed kitchenware
  • Bowl
  • Dutch oven (or casserole dish, or deep large pot)
Instructions

1.

Preheat your oven to 220c.

Heavily grease your Dutch oven or casserole dish with butter and place in the oven until hot.

3.

Whisk all the ingredients together and pour into the Dutch oven or casserole dish.

4.

Bake for about 20 minutes.

Serve with berries, yogurt, chia jam, or butter..
