Lemon & Herb Chicken Skewers

This recipe is inspired by greek flavours to create a fresh tasting summer recipe. Feel free to experiment with other veggies on your skewers!
Ingredients

For the skewers:

  • 2 chicken breasts, diced
  • 1 red onion, diced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp garlic powder/granules
  • 1 tbsp dried italian herbs
  • ½ tsp ginger
  • ½ tsp cayenne
  • Salt and pepper

For the sauce:

  • ½ cup coconut yogurt
  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • About 5 mint leaves thinly sliced
  • About 5 sprigs of parsley thinly sliced
  • 1 tsp garlic powder/granules
  • Generous amount of salt and pepper
  • ¼ cucumber grated (optional)

Instructions
1.
Marinate your chicken and onion in a mixture of all of the other skewer ingredients for about 30 minutes.
2.
Soak your skewers in water for about 20 minutes so they don't burn.
3.
Thred your skewers, alternating onion and chicken pieces, aiming for similar thickness so they cook evenly.
4.
Add your skewers to a bbq or preheated griddle pan over medium high heat.
5.
Cook, turning every couple of minutes to get all the sides.
6.
Continue until the chicken is cooked through, about 15 minutes.
7.
Meanwhile, mix together the dipping sauce ingredients and serve on the side.
