Lemon Blueberry Overnight Oats

A delicious and easy recipe that reminds me of lemon blueberry cheesecake!

Ingredients

  • 1.5 cups oats 
  • 3 tbsp chia seeds
  • 2 tbsp unsweetened coconut yogurt or Greek yogurt 
  • 1.5 cups milk of choice (or more if necessary)
  • 1 tsp vanilla extract 
  • Zest of 1 lemon 
  • 1/2 cup blueberries 
  • 1 tsp cinnamon (optional) 
  • 1 scoop unsweetened collagen protein or protein powder (optional) 

Instructions

Step 1

Mix all the items together and place in an airtight container. Add more milk if the oats are not saturated.

Step 2

Leave in the fridge for at least 2 hours to overnight.

Step 3

Enjoy cold or warm.
