Kimchi ham and egg cups

A super easy breakfast or lunch that comes together so quickly! Kimchi is an amazing fibre-rich fermented food packed full of probiotics!
Ingredients
  • 6 pieces of ham 
  • 6 tbsp kimchi
  • 6 tbsp shredded cheese
  • Handful of spinach 
  • 6 eggs 
  • Salt and pepper

Instructions
1.
Preheat oven to 180c.
2.
Lightly grease a muffin tray with a small amount of oil or butter.
3.
Add a piece of ham to each hole, then 1 tbsp kimchi, 1 tbsp cheese and a few pieces of spinach.
4.
Then crack an egg on top of each ham basket and season.
5.
Place in the oven for about 20 mins or until the eggs are baked to your liking.
