Halloumi, Tomato and Egg
This is one of my favourite vegetarian breakfasts! I adore grilled halloumi and it works so perfectly with the roasted tomatoes and eggs.

Ingredients
- 2 eggs (cooked any style)
- 1 packet of halloumi, sliced.
- 1 tsp olive oil
- 400g small tomatoes (I love sugarbelle or san marzano)
- Salt and Pepper
Instructions
Step 1
Pre-heat oven to 180c.
Step 2
Lightly coat the tomatoes with olive oil on a baking tray and season with salt. Cook for about 20 minutes.
Step 3
Meanwhile, heat a grill pan over medium high heat. Lightly brush the halloumi with olive oil. Grill for about 2 minutes each side, when they have a nice char.
Step 4
Cook your eggs your prefered way, and then add the halloumi and tomatoes to the plate.
