Grilled tofu with scallions and mince

This is a dish from a specific part of the Chinese cuisine called the hakka cuisine. The hakka cuisine uses a lot of mince meat to flavour their dishes thus there is a lot of emphasis on making the mince meat.
Ingredients
  • 2 firm tofu
  • 200g chicken mince
  • 5g soy sauce
  • 30g taucu (bean sauce)
  • 15g sesame oil
  • 5g black rice vinegar
  • 10g shao xing
  • 30g onion (cut into slices)
  • 5g garlic (cut into slices)
  • 2 tbsp oil ( + 1 tbsp oil for grilling tofu)
  • 30g scallions (cut into rings)

Instructions

Lightly salt the tofu on all sides and let it sit for 30 minutes to draw out excess water. Then pat it dry on all sides.

Heat up a pan on high heat until smoking hot and add in a tbsp of oil. Add the tofu in to let it grill and grill it for 2 mins per side or until you get a nice char. Once finished, set it aside to let it cool down.

In a bowl, mix the chicken mince, soy sauce, taucu, black rice vinegar, and shao xing together and mix it well.

In a pan, add in 2 tbsp of oil and heat it on low heat for 30 seconds then add in the onion and garlic and saute it for 15 seconds. Then add in the chicken mince mixture and cook it for 2 minutes or until the chicken mince is fully cooked.

After 2 minutes, move the chicken mince into another bowl to let it cool down then add in the sesame oil and mix well.

Cut the tofu into slices then top it up with the chicken mince then garnish with the scallions and serve.

Tip
Be patient when grilling the tofu because tofu can take a long time to get a nice colour when grilling. Don’t flip it too early.
