Garlic Parmesan Chicken

A delicious, easy, one tray dinner? Yes please! I was so happy with how delicious this easy dinner was!

Ingredients
  • 4 chicken thighs (bone in, skin on) 
  • 1 tbsp butter, melted
  • 1 tbsp olive oil 
  • 3 large garlic cloves, pressed or finely minced 
  • 2 tbsp thyme leaves 
  • 2 tbsp finely grated parmesan (or vegan parmesan)
  • Salt and pepper 
  • 200g sugar snap peas

Instructions

Preheat oven to 180c

Combine the melted butter, olive oil, garlic, thyme, parmesan, salt and pepper

Place the chicken thighs on a baking tray skin side up and rub with the garlic mixture.

Place in the oven for 35 mins.

Remove the tray and add the sugar snap peas around the chicken, tossing them in the sauce that will spread around the chicken.

Place back in the oven for about 10 more minutes, when it should be crispy on top and fully cooked.

Tip

Use a meat thermometer if you want to check that your chicken is fully cooked.
