Fish en Papillote

This is just a fancy term for fish steamed in parchment paper. It's so easy to do, so healthy, and the varieties are endless. I have made a Chinese inspired cod recipe here but the formula would be the same for any flavour variety you want.
Ingredients
  • 2 cod fillets
  • 1 bok choy
  • 2 cloves garlic minced
  • 1 chilli pepper diced
  • 1 inch ginger chopped into matchsticks
  • 2 cups mushrooms diced
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 2 tsp lime juice
  • 2 tsp fish sauce

Instructions
1.
Preheat your oven to 180°C.

Tear two large pieces of parchment paper.
3.
Divide the bok choy strips between the two pieces of parchment, near one edge of the paper. This will be your base.

Add your ginger on top, and then half of your garlic and chilli peppers.
5.
Place the cod on top of that, and then the mushrooms and remaining garlic and chilli peppers.
6.
Mix together the soy sauce, sesame oil, lime juice and fish sauce, and then pour over the cod.

Crimp the edges of the paper over the cod, as if it was a giant pasty or empanada. The cod should be completely contained within the paper.
8.
Place the fish pockets in the oven and cook for about 20 minutes.

Unwrap and serve.

Tip
Formula: Fish of choice + veggies of choice + aromatics of choice + healthy fat of choice - eg. Salmon + courgette and broccoli + garlic, lemon, capers and parsley + grass fed butter - eg. Sea bass + asparagus, spinach and cherry tomatoes + garlic, shallots, lemons and thyme + olive oil
