This recipe comes from my Mum’s kitchen and is the easiest thing in the world! It’s also high in nutrients, low calorie and delicious!

Whisk your eggs with a fork in a little bowl.

Bring the stock to a boil and then reduce to a simmer in a large pot

Add in the spinach and allow to wilt for a minute or two.

Drizzle in the eggs as you stir the soup. After about 30 seconds, remove from heat, add the soy sauce and season to taste.
