Creamy Bacon Chicken

This reminds me of cordon bleu chicken that I loved as a kid! It feels very indulgent and is a quick and simple date night meal!
Ingredients
  • 4 chicken breasts
  • 8 rashers of bacon (fat removed
  • A box of Boursin herbed cream cheese (you can also use any other brand)
  • Olive oil

Instructions
1.
Preheat your oven to 200°C.
2.
Slice your chicken breasts in half to butterfly them so they make one thinner breast.
3.
Add a quarter of the cream cheese to each chicken breast and then close it back up to its original form.
4.
Wrap tightly with 2 rashers of bacon for each chicken breast. Drizzle with a little oil (½ tbsp).
5.
Place on a baking tray and cook for around 30 minutes, until cooked through.

Serve with green vegetables, salad or roasted tomatoes.
