A fun holiday breakfast or appetiser

Preheat oven to 180c.

To make the cranberry sauce, add the cranberries and orange juice to a small saucepan over medium high heat.

Reduce to simmer and stir until it becomes a mushy sauce. Add some maple syrup to taste.

Mix together the eggs, milk, spinach, salt and pepper.

Spray a muffin tin with one spray each of olive oil to grease or use a little butter to lightly grease.
6.
Add the egg mixture. And then divide the Brie and cranberry sauce between the holes.

Bake for about 15 minutes.
