Cranberry Brie Quiche Bites

Ingredients
- 4 eggs
- 3 tbsp milk of choice
- Handful of spinach, torn or cut into small pieces
- 50g Brie, cut into small pieces
- 2 tbsp cranberry sauce
- 250g cranberries
- Juice of 1 orange
- Up to 2 tbsp maple syrup (optional)
- Salt and pepper
Instructions
Step 1
Preheat oven to 180c.
Step 2
To make the cranberry sauce, add the cranberries and orange juice to a small saucepan over medium high heat.
Step 3
Reduce to simmer and stir until it becomes a mushy sauce. Add some maple syrup to taste.
Step 4
Mix together the eggs, milk, spinach, salt and pepper.
Step 5
Spray a muffin tin with one spray each of olive oil to grease or use a little butter to lightly grease.
Step 6
Add the egg mixture. And then divide the Brie and cranberry sauce between the holes.
Step 7
Bake for about 15 minutes.
