Chop the courgettes in half longways, and remove the hard ends.

Use a spoon to scoop a little out the middle of each courgette slice to make a little boat.

Sprinkle with salt and pepper.

Spoon tomato sauce into the boats and then sprinkle with Parmesan.

Place in the oven for about 20 minutes when the courgette should be soft and the tops crisp.
