Courgette oat bread

I made this delicious bread to satisfy those cravings but also have a lot of fibre and vegetables!

Ingredients

  • 200g grated courgette
  • 2 eggs 
  • 3 tsp vanilla extract 
  • 3 tbsp honey 
  • 70g fat free greek yogurt 
  • 300g oat flour 
  • 1 tsp cinnamon (optional or more if you like) 
  • 1 tbsp flaxseed (optional but adds so much fibre) 
  • 1 tsp baking soda 
  • 1 tsp salt 
  • Extra oats or seeds to top (optional) 

Instructions

Step 1

Preheat oven to 180c.

Step 2

Squeeze out any excess water from your courgette using a sieve or between a cloth or kitchen roll.

Step 3

Mix all of your wet ingredients together and then mix all of your dry ingredients together.

Step 4

Add the dry into the wet and stir to combine.

Step 5

Place in the oven for 40-50 mins
