Courgette oat bread
I made this delicious bread to satisfy those cravings but also have a lot of fibre and vegetables!

Ingredients
- 200g grated courgette
- 2 eggs
- 3 tsp vanilla extract
- 3 tbsp honey
- 70g fat free greek yogurt
- 300g oat flour
- 1 tsp cinnamon (optional or more if you like)
- 1 tbsp flaxseed (optional but adds so much fibre)
- 1 tsp baking soda
- 1 tsp salt
- Extra oats or seeds to top (optional)
Instructions
Step 1
Preheat oven to 180c.
Step 2
Squeeze out any excess water from your courgette using a sieve or between a cloth or kitchen roll.
Step 3
Mix all of your wet ingredients together and then mix all of your dry ingredients together.
Step 4
Add the dry into the wet and stir to combine.
Step 5
Place in the oven for 40-50 mins
