Cinnamon Roasted Butternut Squash Salad

A festive spiced salad filled with delicious whole foods! Cinnamon is full of wonderful antioxidants, and pumpkin seeds have lots of magnesium!
Ingredients
  • 400g butternut squash, cut into chunks
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon (more if you love cinnamon)
  • Salt and pepper 
  • 90g rocket salad
  • A big sprinkling of pumpkin seeds 
  • 2-3 tbsp parmesan (or vegan parmesan) 
  • Simple Dressing: 1 tbsp lemon juice, 1 tbsp balsamic vinegar, 2 tbsp olive oil, salt and pepper

Instructions

Preheat oven to 200c.

Mix butternut squash with olive oil, cinnamon, salt and pepper.
3.
Roast for about 30 mins.
4.
Whilst the butternut squash roasts, mix up a simple dressing.
5.
Add the roasted squash to the rocket in a large bowl.
6.
Add in pumpkin seeds, optional parmesan and dressing, and then toss to combine.
