Chopped Salad

This is a copycat recipe of one my favourite salads in Los Angeles! It’s super filling, delicious, and can be easily adapted to your preferences. Some alternate ingredients could include beets, cucumber, chickpeas, peppers, tofu or feta.
Ingredients

For the salad pictured:

  • 2 romaine hearts chopped
  • 300g iceberg lettuce chopped
  • 4 cooked chicken breasts diced
  • 8 rashers of cooked bacon chopped (fat removed) 
  • 3 hard boiled eggs quartered
  • 1 avocado diced
  • 250g cherry tomatoes halved
  • ⅓ cup cheddar diced
  • Salt and pepper to taste

For the dressing:

  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 4 tbsp balsamic vinegar
  • ½ cup olive oil
  • Salt and pepper to taste
Needed kitchenware

Instructions

Mix all the dressing ingredients together.

Divide the ingredients between four bowls and drizzle with your dressing.
