Chickpea Chaat Salad

Chickpea Chaat is a popular Indian street snack made with boiled chickpeas, potatoes and a variety of crunchy and flavourful veggies and toppings. This version is simpler and made with everyday ingredients that you probably already have in your kitchen right now.
Ingredients

Salad

  • 1 Tomato (remove seed and pulp then diced) 
  • 1 Red Onion (peeled and diced)
  • 1 Cucumber (deseeded and diced)
  • 400g Boiled or Canned Chickpeas (rinsed and drained)
  • 1 Green Capsicum (deseeded and diced)
  • 1 tbsp Red Chilli (deseeded and diced)
  • 1/2 cup Coriander Leaves (chopped)
  • Handful of Mint Leaves

Dressing

  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Red Chilli Powder
  • 3 tbsp Lemon Juice
  • 2 Garlic Clove (minced)
  • 1 tsp Cumin Powder
  • 1 tsp Chaat Masala
  • 1 tsp Tamarind Paste
  • 1⁄2 tsp Crushed Sea Salt Flakes
Needed kitchenware

Instructions
1.
Drain your chickpeas and place them in a bowl alongside all your diced vegetables, coriander and mint.

Prepare the dressing by mixing all the ingredients listed.
3.
Add the dressing to the vegetables and mix well until everything is coated evenly.

Top it with your topping of choice and a slice of lemon.
