Chicken Satay with Yoghurt peanut sauce

This delicious dish is full of protein and fresh spices that are good for your health.
Ingredients

Chicken satay

  • Skewers (about 10 skewers)
  • 400g chicken breast (cut into medium size cubes)
  • 10g fresh red chilli
  • 5g turmeric
  • 50g red onion
  • ½ tsp salt
  • 2 tsp coriander seed powder
  • 1 ½ tsp cumin powder
  • 20g coconut milk
  • 50g oil

Peanut sauce

  • 10g dried chilli (soaked in water)
  • 20g garlic
  • 100g shallots
  • 30g lemongrass (1 lemongrass stalk)
  • 5g galangal
  • 1 tsp coriander powder
  • 100g crushed peanuts
  • 20g Penang black vinegar
  • 50g oil
  • ¼ tsp salt
  • 50g water
  • 100g natural yoghurt (or coconut yogurt)

Instructions

Chicken Satay -

Place everything except the chicken breast and skewers into a blender and blend until very fine.

Pour the spice mix into a bowl and mix with the chicken breast

Then skewer 2-3 cubes of chicken breast skewers and let it marinade for at least 30 minutes

Preheat an oven on grill mode at 180C

Place the chicken satays into the oven and cook for 12 minutes. Remember to flip it halfway in order to get a nice char around the whole satay.

Peanut sauce -

Place chilli, garlic, shallots, and galangal into a blender and blend until smooth

Heat up the oil in a pan and add the spices paste as well as the lemongrass and cook until the colour slightly darkens. It should take about 5 minutes.

Then add in the peanuts, salt, water, yoghurt, and coriander powder and cook until desired consistency. It should be as thick as tomato sauce

Tip
Soak your skewers in water before using to prevent burning.
