Chicken Quesadillas

I love Mexican food and I think quesadillas are such a great comfort food!
Ingredients
  • 2 low carb wraps (for example look for the "BFree" brand Avocado Wraps )
  • 1 tbsp Olive oil
  • 2 chicken breasts, diced
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp chilli powder
  • ½ tsp garlic powder
  • 200g tomatoes, chopped
  • 2 handfuls of spinach
  • Salt and pepper to taste
  • 1 cup grated cheese
  • 3 spring onions, chopped

Instructions
1.
Heat olive oil in a pan over medium high heat.

Season your chicken with salt, pepper, cumin, paprika, chili powder and garlic powder. Add the chicken to the pan and cook until browned.

Add the spinach and tomatoes and continue to cook until the chicken is cooked through and the tomatoes are soft. Remove from the pan and clean the pan.

Heat your wrap in the same pan (now its been cleaned) over medium heat. Add the cheese, spring onions and chicken mixture to one half of the wrap.

Fold over and cook both sides until the cheese is melted. Repeat with the other wrap.
