Chicken Masala

This is my super light and healthy take on a classic tikka masala. With spices like tumeric which are incredibly anti inflammatory, this dish is so good for your whole body! Use any protein you like, I love using chickpeas or tofu for days I’m eating less meat!
Ingredients
  • 1 tbsp olive oil
  • 1 red onion chopped
  • 4 garlic cloves minced
  • 1 jalapeño (or green chilli) sliced
  • 1 tbsp ginger minced
  • 250g choice of protein, diced (chicken used in the photo)
  • 2 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp tumeric
  • Salt and pepper
  • 1 can of chopped tomatoes
  • ½ cup of water

Instructions
1.
Heat olive oil in a large pot over medium high heat and then add the onion.

Allow to cook until translucent and then add the garlic, jalapeño (or green chilli) and ginger.

After a minute or two, add your choice of protein and allow to brown.

Add your garam masala, cumin, tumeric, salt and pepper, and stir to combine.
5.
Add the tomatoes and water, boil and then reduce to a simmer.
6.
Allow to simmer until it has reduced to a thick sauce, about 15 minutes.

Serve with cauliflower rice and steamed vegetables.
