Chicken Cacciatore

A healthy and delicious Italian style chicken dish. Only a little prep time, and then you can just leave it to simmer so it ends up so moist and tender.

Ingredients
  • 2 chicken legs (bone on, skin on)
  • Olive oil
  • Salt and pepper
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 cups of mushrooms sliced
  • 1 can of diced tomatoes
  • 1 ½ cups of chicken or vegetable broth
  • 1 handful of torn basil leaves

Optional additional vegetable ideas:

  • Red pepper
  • Courgette
  • Broccoli
  • Spinach

Instructions

1.

Heat a large drizzle of olive oil (1½ tbsp) over medium high heat in a large deep pan.

Season your chicken legs generously with salt and pepper, and then add on the pan. Allow to brown on both sides, about 5 mins each side.

Remove the chicken and then add the onions.

Allow to cook for about 3 minutes until translucent, and then add your garlic and mushrooms.

Cook for another couple of minutes. Add the chicken back to the pan and the diced tomatoes.

6.

After a minute, add the broth and basil.

7.

Bring to a boil and then reduce to a simmer until the chicken is cooked through, about 30 minutes.
