Cauliflower Mash

I adore mashed potatoes but not all those heavy carbohydrates. This is a low carb alternative that I truly believe everyone will enjoy! In fact, some people may even like it better than traditional mashed potatoes, and it works for all of those dishes where you would normally have mash. Keep this recipe on hand for the holiday season when potatoes usually play a starring role!

Ingredients

  • 1 medium cauliflower chopped into florets
  • 2 tbsp butter (or vegan butter)
  • 1 tsp garlic powder
  • ΒΌ cup nutritional yeast (or grated parmesan)
  • Salt and pepper
  • 2 spring onions, sliced

Instructions

Step 1

Blanch your cauliflower in boiling water for a few minutes until tender.

Step 2

Drain the water, and keep the cauliflower in the pot.

Step 3

Turn the heat to low, mash the cauliflower with a masher or fork, and then add the butter and garlic.

Step 4

Once that is all melted and combined, add the nutritional yeast and season - be particularly generous with the salt.

Step 5

Top with spring onions, stir and serve!
