Cauliflower fried rice with egg and prawns

This is a dish that every person has tried at least once in their lifetime. Fried rice is basically cooking any vegetables and proteins with rice or in this case, cauliflower rice in a pan. Can’t go wrong.
Ingredients
  • 10g Garlic
  • Oil
  • 2 eggs
  • 10pcs small Prawns
  • 180g Cauliflower rice (or use a food processor to turn cauliflower into small grains by blending for 2-3 mins)
  • 2 tbsp Soy sauce
  • 1 tbsp Fish sauce
  • Dash of pepper
  • Chopped scallions

Instructions

Place the pan on the stove and turn on high heat. Add in 2 tbsp oil and add in chopped garlic, scallions and small prawn and cook for 3 minutes.

Then add in cauliflower rice and fry till the rice is soft.

Once soft, push the fried rice to the side of the pan. On the empty side of the pan, add in a touch of oil and add in egg to scramble.

Mix the eggs and rice together. Then add in soy sauce, pepper and fish sauce to season. Once satisfied with the taste you may serve with a sprinkle of scallions.

Tip
Make sure the pan is really hot before adding the cauliflower rice. Because you really want to get that ‘wok hei’ smoky pan seared flavour.
