Place the pan on the stove and turn on high heat. Add in 2 tbsp oil and add in chopped garlic, scallions and small prawn and cook for 3 minutes.

Then add in cauliflower rice and fry till the rice is soft.

Once soft, push the fried rice to the side of the pan. On the empty side of the pan, add in a touch of oil and add in egg to scramble.

Mix the eggs and rice together. Then add in soy sauce, pepper and fish sauce to season. Once satisfied with the taste you may serve with a sprinkle of scallions.
