Cauliflower Fried Rice

Fried rice is one of my favourite things so here is a lightened up version for you to try! Use whatever protein and vegetables you like.

Ingredients
  • 200g protein of choice (eg. diced chicken, prawns, tofu etc)
  • Salt and pepper
  • Olive oil
  • 2 cups diced vegetables
  • Sesame oil
  • 400g cauliflower, riced (you can buy it pre-riced like or you can make it yourself by grating cauliflower florets)
  • 1 tbsp garlic powder
  • 2 eggs
  • 5 spring onions, chopped
  • 2 tbsp Soy sauce
Needed kitchenware
  • Deep pan
  • Knife
  • Chopping board
Instructions

1.

Heat a large drizzle of olive oil (1½ tbsp) in a deep pan over medium high heat.

Once hot, season your protein with salt and pepper, and add to the pan.

Cook until browned on all sides, timing dependent on type of protein.

Once browned, add in your vegetables, season with salt and pepper, and stir.

Once your vegetables have started to soften and brown, add the sesame oil and the riced cauliflower.

Add in garlic powder and some more salt and pepper, and cook for a few minutes.

7.

Crack the eggs into the pan and add the spring onions. Stir around until egg is cooked and mixed in.

Add your soy sauce, stir to combine, and then serve!

Tip

Optional toppings could be more spring onions, sesame seeds or sriracha hot sauce.
