I really love the cashew topping as it is so tasty and delicious! You could actually use it as a dipping sauce or on other proteins.

Preheat your oven to 180c

Blend all of the ingredients, other then the chicken, until pretty smooth in a blender. Add more olive oil if needed to get your desired consistency. (A bit chunky is fine and how I like it)

Place the chicken on a baking tray and cover with the cashew sauce
4.
Place in the oven for about 25mins or until cooked through
5.
Serve with vegetables!
