Poach your chicken by placing the breasts into a pot with water that covers the chicken by at least 2cm and add some salt.

Bring to a boil and then immediately reduce to a simmer.

Simmer for around 15 minutes until the chicken is cooked through.
4.
Remove the chicken from the water and shred, using two forks.
5.
Toss the chicken in the hot sauce and place on the lettuce to make wraps.
