Braised Boneless Chicken Thighs in Onion Sauce

Ingredients
  • 2 whole boneless chicken thighs with skin on
  • Juice of 4 small Kalamansi limes
  • 2 whole medium onions, cut into thin slices
  • 2 cloves fresh garlic, finely minced
  • 1 tbsp cooking oil
  • 3 tbsp light soy sauce
  • 200 ml water
  • 2 bay leaves
  • Pinch of white pepper

Instructions

Wash chicken thighs and pat dry
2.
Combine lime juice, garlic, soy sauce & pepper and marinate chicken thighs in this mixture for 30 minutes

Heat wok on medium high heat for 1 minute. Add oil and heat for another 30 seconds

Remove chicken from marinade sauce, and set aside marinade

Add chicken thighs to wok and fry for 3 minutes on medium high heat or until skin turns light brown. Flip thighs and fry for another 3 minutes

Add water, onions rings and bay leaves to chicken, bring to boil, turn to low heat, cover wok with lid. Simmer chicken for 15 minutes and turn over thighs and simmer for another 15 minutes or a little longer until sauce thickens.

Place chicken thighs onto shallow dish and pour sauce into dish and serve immediately
