Baked Oats

I adore this new trend to bake oats! There are so many flavour combinations you could try and you get a wonderful serving of fibre. We really all need to work on getting enough fibre each day, as the average person consumes only half the recommended daily amount.

Ingredients
  • 90g oats
  • 2 eggs
  • 200g unsweetened coconut yogurt (or dairy if you prefer)
  • 100g berries (or more if you want it sweeter)
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tbsp chia seeds
Needed kitchenware
  • Blender
  • 2 ramekins or small baking dishes
Instructions

1.

Preheat oven to 180°C.

In a blender, combine all ingredients.

3.

Pour them into two small baking dishes and bake for about 25 minutes.

Serve with extra yogurt, berries, nut butter or whatever you prefer.
