Ayam Pongteh
Ayam Pongteh is one of the easier dishes to cook in a Nyonya cuisine. It’s a a one pot stew dish!

Ingredients
- 1kg Chicken (chopped)
- 100g Broccoli
- 50g Mushrooms (sliced)
- 25g Kidney beans (soaked in water overnight)
- 470g Water
- Peanut Oil
- 3 tbsp Tau chu
- 3 Nos Onions (diced)
- 10 cloves Garlic (sliced)
- 5g Coriander leaves (chopped)
- 1 tbsp Dark soy sauce
- 1 tbsp honey (optional)
Instructions
Step 1
Heat a large pan on medium heat, add in peanut oil, sliced garlic and diced onion, stir everything till slightly caramelized (about 3 minutes).
Step 2
Then add in Tau Chu and honey (if using) and continue frying for 1 minute.
Step 3
Add in chicken, broccoli, mushrooms and kidney beans.
Step 4
Add in water and 1 tbsp of dark soy sauce. Let it simmer for about 20 minutes or until the chicken is tender and cooked through.
Step 5
Place the finished stew in a bowl, garnish with chopped up coriander leaves and serve.
