Air fryer aubergine

This was so tasty and delicious, I made it two times in a week!

Ingredients
  • 1 aubergine, diced into 1 inch cubes
  • 1 tbsp sesame oil or olive oil
  • Sesame seeds to serve 

Sauce

  • 1 tbsp soy sauce 
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar 
  • 1 tsp sriracha or hot sauce 
  • 1 tbsp garlic chili sauce (optional) or 1/4 tsp garlic powder and more hot sauce 
  • 2 spring onions, chopped

Instructions

1.

Toss the aubergine in the sesame oil and then place, single layer, in the air fryer at 190c for 8 mins.

Mix all the sauce ingredients together.

3.

Remove the aubergine and toss in the sauce.

4.

Place in the air fryer at 190c for another 7-8 mins.

Tip

Start checking in after about 5 minutes as size variations can change cooking times.
